The world works in mysterious ways and sometimes you get a review box of Lehi Mills Pumpkin Chocolate Chip Cookie mix just in time for holiday baking!
I was fortunate to receive this box and got right to baking the cookies the Tuesday before Thanksgiving so my family had something to snack on throughout the week. I wanted to try this mix because they’re less hassle than the traditional cookie dough mix and with higher quality ingredients.
Lehi Mills prides itself for having over 100 years of “Milling Mastery” and in their high mountain flower which will rise when and how a baker wants, every time. Since the wheat is freshly ground in small batches, the flour yield is light and fluffy in texture which is not at all like the general all-purpose flour in the store. Of course that flour has its place, but Lehi Mills flour is extra special!
They describe the cookies I made as, “Earthy, sweet, buttery pumpkin meets gooey chocolate chip cookie. Skip over good and head straight to scrumptious with our Pumpkin Chocolate Chip Cookie Mix. Every bite delivers a burst of fall flavors that tastes amazing year-round.”
All you need is 1/3 cup vegetable oil and one 8 oz. can of pumpkin. Mix together and drop by spoonful on a greased cookie sheet. My only mistake was not using a cookie scoop because it was a tad difficult to get the mix off the spoon!
Then bake for 15-18 minutes at 375 degrees F, and you’ve got 26 very fluffy and pumpkiny cookies. Just make sure you check the cookies after 15 minutes because I did not and left them in just a tad too long.
At $4.99 the mix is obviously pricier than what you’d get at the store from Betty Crocker, but for the flour and the taste, I would say it is worth it! Especially because it took less than half an hour to prep and bake.
For anyone looking to make cookies without a ton of work, this mix was quick and easy. No eggs or other ingredients, just the oil and pumpkin. Bam, it was that easy.
